The key to success is preparation. Fail to prepare, prepare to fail, we have all heard it, the same goes for keeping your nutrition on point. My advice would be to make 1 big batch of food on a Sunday that can cover 1 meal per day for the coming week. So without further a due let me introduce my big beef chilli. Ideal for these chilly days, keeps well in the fridge and is easy peasy to put together. Simply divide into Tupperware and reheat when you want it. Eat on its own or boil up some rice. Can’t get much easier than that. The following recipe will make 5-7 portions depending on serving size, it can always be altered.
2 packets of aldi 800g beef mince
1 large corgette
2 bell peppers
1 bag of spinach
1 tin of kidney beans or mixed beans
1 tin of peeled of chopped tomatoes
Salt and pepper
Chop all vegetables into fine pieces.
In a very large pot heat some coconut oil and sautte onion.
Add mince, garlic, herbs, salt and pepper and cook until browned.
Throw in all the vegetables.
Add tomatoes and beans and stir until evenly distributed.
Add chilli flakes, cayanne pepper, chilli powder to taste (hot or mild)
Add 2 tablespoons of cocoa powder to give a real smoky flavour (trust me)
Finally add spinach.
Allow to cook for approximately 20-30 minutes, or until water is reduced and vegetables are soft, don’t forget to taste and add spices accordingly.
