I am a fan of a nice warm bowl of porridge in the morning, mixed in with nuts and seeds and some fruit to bolster the nutritional value of the breakfast and set me up for the day. However, there is a lot to be said for a bit of crunch in the morning as well. The other day I set about making a nutritious and delicious crunchy muesli. As it happens, it turned out ok, so I thought I would share it with all the lovely ACLAÍ followers out there.


What you need:

–       5 cups of organic porridge oats

–       2 cups of oat bran

–       1 cup of walnuts

–       1 cup of hazelnuts

–       1 cup of almonds

–       ½ cup of sunflower seeds

–       ½ cup of pumpkin seeds

–       ½ cup of sesame seeds

–       3 table spoons organic honey


What you do:

–       smash the nuts up with a pestle and mortar

–       mix all the ingredients in a big bowl

–       pour the mixture into an oven dish

–       place into the oven for around 20 minutes at around 150 Celsius

Note: if you want the muesli a bit crunchier, leave it in the oven for an extra 5 minutes. Beware though that the nuts can burn fairly fast. Its good to take the muesli out of the over after 10 minutes and give the mixture a bit of a shake up.


Serving Suggestion:

This muesli would go down well with some rasberries or blueberries, or even some pineapple, and a couple of spoons of greek yogurt. Enjoy!
